INGREDIENTS (4 persons):
bread crumbs 250 gr
extra virgin olive oil
6 or 7 marinated anchovies or sardines
macaroni 350 (it is always better to choice ribbed or knurled pasta... it's not a matter of shape but it's a matter of grip!!!)
optional: some of parsley and hot pepper
PREPARATION:
Let the oil warming up in the frying pan (just wait until it starts to crackle but to emit smoke*) and then put the anchovies that you prevoiusly cutted into pieces.
Then add the bread crumbs (and the minced parsley and/or hot pepper) and wait until they start to become sautè (before to browining for complete!).
Then dish out the pasta firm, 'al dente' (please, not more than 9 to 10 minutes, irrespective of the time reported on the envelope!!!).
Let pour a part of the seasoning (anchovies and bread crumbs) on a bowl, then add the macaroni and finally the remainng dressing. You just have to stir a bit the pasta and let it seasoning a couple of minutes (in Salento dialect we say "resettare") anb you're ready!!!

* the smoke point of the extra virgin olive oil is about 160 °C (320 °F)
